Well I personally would keep the cats and just replace them with high flows. Their are custom tunes so you can run them without cats but sometimes...
Edge cs so you can get custom tunes.

I'm not familiar with Arizona either but Oklahoma gets hot aswell and I never seen sun damage like that. It honestly looks like they touched it up...

Those 10th gen screw shortbeds look better then there 04-08 counter parts. But crews with LNG beds look good on the 04/08. ;)
