Test the antifreeze concentration, is it at 50/50?

I would do a coolant flush and replace the thermostat first

Has to do with how the mixture reacts to heat an pressure, a cooling system is pressurized which helps raise boiling point of water but you also add the glycol to help even more and to help with corrosion an cooling factors. If the concentration isn't right it'll throw the whole system off

You need a balance of antifreeze and water not one or the other haha. Switching from one extreme to the other wont tell you anything
