Photoshop CS5 help

    I'm used to CS3 and i recently downloaded CS5 and im trying to make a new sig and i can't figure out how to extract(like delete the background like how it's just a picture of my truck and not the background around it) In CS3 you go to 'filter' and extract and you can cut out the background but i can't find extract at all, how do i do this
